Pitaya has a soft bright green flesh and stands three to twelve inches in height. The stems grow in loose clusters in the South Texas Plains. The flowers are purple red in color and bloom in April. After the spines are removed from the green-brown flesh of the fruit, it can be eaten and tastes similar to strawberries. It can withstand freezing temperatures but not too much water.
